We're so pleased to offer this "Natural" coffee from COSMA in Honduras. With natural coffees the cherries are washed and left to dry in the sun. Once the drying is complete... the green seed is removed from the fermented, dried cherry; taking on a natural fruity, cherry undertone.

Fifteen years ago, 62 Honduran coffee farmers joined together with a common goal to transform their farms from conventional to organic production and formed COMSA (Cafe Organico Marcala, S.A).

In 2001, with help from a foundation called Funder, COMSA earned their organic certification.

In 2006, COMSA applied for and was granted Fair Trade certification status. The Fair Trade price premium funds many social projects including teachers’ salaries and school supplies. The premium also finances the construction of kitchens in the schools providing meals for school children.

I’ve been  buying coffee from FMCR for over a year now and have tried several varieties of coffee, some which were custom roasted per my request.  I have never ever  been disappointed. This Honduras Natural makes a creamy cup; mild but full bodied, low acidity, with s subtle sweet melon-like finish.

We sent this coffee in advance of our trip to family on the East Coast. They loved it, and so did we! Coffee drinkers love getting coffee we send via Fair Mountain. Trust me, it makes a welcome gift.

This coffee is the best there is in my opinion!! I brew this coffee in all methods from drip all the way to espresso and the flavor profile is amazing any way it’s brewed.!!!

I'm experimenting with brewing temperature and so far have best results at 85C, but I prefer a coffee with more body. I thought the Guatemalan and Honduran coffees would be similar, but they are quite distinct.
